The Final Touch Is Added By Nature

After decades of producing the finest tequila in Mexico, in the rich region of Los Altos de Jalisco, where the land provides unique qualities to agaves, we have discovered that there are elements that can be controlled in order to bring the maximum expression in every stage of the process, and that there are elements that cannot be controlled; such as mother earth’s natural elements, which are both different and unique each year and provide that special touch to each of our harvests. 

 

We only use Agaves from the Los Altos region, which mature in a lap period that takes between 6 to 8 years, giving its particular citrus, fruit and floral notes that can only be provided by this land. 

 

We pay special attention to constantly monitoring the mother plants, from which the lineage comes by being strengthened with strong and sugar-rich agaves "hijuelos" - sons - which grow naturally thanks to their origin.

The Jima flush is harvested and sent to the farm the same day in order to preserve its freshness. 

 

Using techniques inherited from generation to generation, the process continues. The Agaves are manually put into masonry ovens so that they can be cooked to perfection. 

 

The oven walls provide earthy, smoky aromas and tastes, thanks to the heat and the Tahona method. The cooked agave is thenplaced on the surface of the stone to extract its juices and sugars.This extraction process gives us mineral notes of wet earth and the sweetness of the Agave.

Fermentation takes place in stainless steel vats, where most of the qualities of our tequila is generated coming from the more than 300 components of the agave. 

 

We carry out two distillations in stainless steel still vats with a copper soul. Doing so adds to the richness of the aromas and flavors. 

 

Our liquid is rested in medium toasted American oak barrels where the white tequila meets an aged tequila. The process carries out a dynamic balance in which each one contributes its components. Here, we find notes of cocoa, coffee, caramel, vanilla and honey. The American oak barrels give us more complex and balanced notes of spices and smokiness, 

 

We can proudly say that we have developed an artisan process which focuses on the care of each stage. However, the final ingredient, the one that makes each batch unique, is the touch of nature itself: the rain, the sun, the wind, and the soil. Every year these elements provide us with a unique product with special characteristics.
